As I mentioned yesterday, I have a bit of a hesitancy in trying new things. In the kitchen, I worry about buying a bunch of ingredients and then only using them for the one recipe. I have been teaming up with Simple Supper Tuesday and the Humble Bumble Healthy Tuesday Blog Hops to find healthy meal ideas. This week I ran across a recipe for Soy-Lime-Garlic Marinated Chicken. I was so excited because I actually had all the ingredients already on hand.
A friend had told me about this chicken outlet place that sells all types of frozen chicken. They had huge 5lb bags of chicken breasts for $8.99. The only difference in the chicken was that the chicken breasts were not uniform, but that didn’t bother me. Anyway, I used those for this recipe.
1 lb of chicken tenders (I used chicken breasts, but a lot of them were small pieces)
2 tbsp. olive oil
3 tbsp. Soy Sauce
3 tbsp. Lime Juice
3 Cloves of Garlic, minced
1 tbsp. of Worcestershire Sauce
This recipe was super easy to fix. I actually did 1.5 lbs of chicken, so I just adjusted the ingredients as needed. I used a mini food processor to mince the garlic.
Then I mixed all the sauces together, and put them in a zip lock bag with the chicken. I let the chicken marinate for about 3 hours. Next time I will do it overnight. My mother suggested I turn the bag over half way through. I hadn’t thought about that, but I think that would make it even better.
After the chicken had marinated for a bit, I heated up our indoor grill and put the chicken on the grill to cook.
The kitchen smelled wonderful as the chicken grilled!!
This meal was definitely a repeat. My husband really enjoyed it as well. It made me think of Chinese, which I have really been missing. In regards to nutrition, I figured the recipe based on using 1 1/2 pounds of chicken and it was 408 calories for 8 ounces of chicken. That is a winner for me I am pretty excited to try two yummy recipes this week. What have you been cooking lately?
